New pasta in town – Pici and Pappardelle

 

Hi, please meet Pici and Pappardelle pasta. Pici and Pappardelle are one of the famous dishes in Tuscany region.

Chef Fabio note on introducing these two kinds of pasta to the diners:

“I started to learn about these two pasta dishes when I was working in Tuscany, Italy.
Pici pasta is very simple dish but very tasty because together with porcini mushrooms and pork bolognese sauce, the simple pasta will come in savoury and tasty, also a balanced diet as it contains healthy carbo, protein and fibre.

For pappardelle pasta, it is my own home-made flat pasta with wild boar. Pappardelle are large, very broad, flat pasta noodles, similar to wide fettuccine. The name derives from the verb “pappare”, to gobble up. Cooking wild boar is very challenging because it takes a long and complicated process. For the wild boar, we have to marinate for 24 hours inside the red wine, together with carrot, celery, and onions. After that, I will start to cook the wild boar with the same red wine that I have marinated, cooking the meat with real tomato sauce until the meat became soft. ”

Thus, we are pleased to inform you that Pici and Pappardelle are available at Sapore. Ps: we might be the only one having these pasta!
